Vineyards: the vines, over 50 years old, insist on predominantly clayey soils, with a good percentage of limestone, rich in mineral elements; they are mostly managed by pergola and spurred cordon. The harvest takes place manually in the period from the end of September to the first ten days of October.
Vinification: the method of soft pressing with whole stalk and subsequent cold decantation is used. Alcoholic fermentation and aging in steel, no filtration or clarification
Organoleptic analysis:
Colour: straw yellow with amber reflections.
Aroma: hints of pulp fruit, vegetal and sulphurous notes with spicy hints.
Taste: excellent acidity that conveys freshness and flavor; minerality and elegance with a delicate and soft finish.
Pairings: excellent with raw fish, fish-based first courses, white meats and lightly aged cheeses.
Serving temperature: 11-13°C.
