HARVEST PERIOD: first week of October

Vineyards: the vines, over 50 years old, insist on predominantly clayey soils, with a good percentage of limestone, rich in mineral elements; they are mostly managed by guyot and spurred cordon. The harvest takes place manually in the period from the end of September to the first ten days of October.

Vinification: maceration on the skins throughout the alcoholic fermentation process with daily manual punching down. Aging in French oak barrels for a minimum period of 12 months, no filtration or clarification.

Organoleptic analysis:

Colour: ruby red with garnet reflections

Bouquet: vegetal and dried fruit hints with spicy notes of pepper, cinnamon and vanilla.

Taste: structure and body with crisp and light tannins. Freshness, complexity and lots of flavor with a strong minerality. Persistence and flavor make the wine robust, intense and enveloping.

Pairings: suitable for stewed or grilled red meats and land first courses.

Serving temperature: 16-18°C.
